Recipe // Pico de gallo

Pico de gallo is my favourite fresh accompaniment to many dishes, and with it's Mexican theme it goes great with chicken tacos!

Known in other places as salsa fresca, this fresh version blows the socks off anything you can buy, and it only takes 10-15 mins to make. Well worth it and a taste sensation!

Recipe makes enough for 6 people
Prep time 15 mins

8 ripe tomatoes, de-seeded (save the insides for adding to the chicken)
Handful of coriander
2 spring onions
1 jalapeno chili
1 tablespoon of really good olive oil
1 lime
2 tea spoons of brown muscovado sugar
1 tablespoon of coarse salt
1 tea spoon of black pepper

Chop everything into a small dice on a board, mix in a large bowl and serve. Sorry - did you want it to be more complicated? Sometimes simple is best... Try it with chicken and guacamole tacos!
